What are the best kinds of bread for someone like me who does weight training regularly and needs carbs for energy, but also wants them from healthy sources? I'm looking for the most nutritious options.

The best option would be homemade bread. However, that might not always be feasible or preferred. The next best choice is bread from a bakery that bakes its own bread, as not all bakeries do. Look for ones that use minimal ingredients, with any additives typically aimed at prolonging shelf life, such as sugar.

Authentic sourdough bread made from fermented whole grains is a great choice. It can be tricky to find in stores sometimes, so your best bet is a bakery. The fermentation process breaks down antinutrients in the grains, making them easier for your body to absorb. If the ingredients list includes "enriched" before the type of flour, it's not ideal. A good sourdough should have no more than three ingredients, unless it includes various grains, seeds, nuts, herbs, etc.
