I usually eat a lot of vegetables with my dinner every day.I have 200g of broccoli, 450g of celery, 100g of eggplant, 100g of bell pepper, 200g of courgette, 75g of cabbage, and 150g of mushrooms. I sautée all of this in a pan and eat it along with a protein and carbohydrate. Is this healthy, or is it too many vegetables in one meal?

No, you would need to eat an incredibly large amount of vegetables to experience any negative effects. If you feel good, then continue with your current intake. There might be a concern about consuming too much iron from 200 grams of broccoli a day, but I'm not an expert in that area.

I don't see a big issue, except maybe cutting down a bit on the broccoli. There's a little too much iron in all that broccoli.
