Some studies propose a genetic basis for these differences. Individuals with specific aversions to certain flavors may have genetic variances affecting how taste buds perceive flavor molecules. Marty Jopson discusses this in his book on the science of food.

Conditioning plays a role, including instances where parents urge children to eat specific foods, which can backfire. Children have more sensitive palates and may initially dislike bitter foods and certain textures, but this aversion can lessen with exposure. This is not always the case, but generally speaking. For example, children in Japan eat natto, which is slimy and has a strong smell. Children in India eat spicy curry. These preferences are largely influenced by their environment.

I enjoy almost all vegetables, but I can't stand the taste of any type of seafood—whether it's fish or shellfish.

Some people consider certain habits and choices as needs rather than wants. Unfortunately, not everyone is open to new experiences, but having a wide variety can be beneficial

We all have different preferences, whether it's in music, movies, architecture, or even where we prefer to live—some like cold countries, while others prefer warm ones.

Some individuals are considered 'super tasters' and often dislike bitter foods such as broccoli and coffee. This is because they have more taste buds on their tongue. This could be a possible reason for some people's preferences.
